Phoebus High School has a Full Culinary Program!

The culinary arts program is designed to help students develop fundamental skills in handling food safely, food preparation techniques, and customer service. The program consists of three successive courses.

Introduction to Culinary Arts (8249) - 1 Year                                                                                                 
Instruction focus on exploring the culinary arts industry.  Students will identify and explore the individual careers within the food service industry. 
Units of study include: 
              Exploring Foundations of Culinary Preparations
              Demonstrate Basic Culinary Skills
              Exploring Diverse Cuisines and Service Styles
              Exploring the Concept of Menu Development
              Introducing the Economics of Food
              Exploring a Culinary Career


Culinary Arts I (8275) - 1 Year, Double block                
Year 1 of the 2 year ProStart Curriculum
ProStart is a two year high school culinary arts curriculum that is written by the National Restaurant Association Education Foundation. ProStart teaches the basics of all parts of the restaurant industry—serving, cooking, and management. 
Units of study include:
Examining Safety and Sanitation
            Applying Food-Preparation Techniques
            Preparing Garde Manger
            Learning Baking Fundamentals
            Serving in the Dining Room
            Purchasing and Receiving Goods
            Introducing the Hospitality Industry
            Using Workplace Skills


Culinary Arts II (8276) - 1 Year, Double block  
Year 2 of the 2 year ProStart CurriculumPrerequisites: 8275
ProStart is a two year high school culinary arts curriculum that is written by the National Restaurant Association Education Foundation. ProStart teaches the basics of all parts of the restaurant industry—serving, cooking, and management.
Culinary Arts II provides students an opportunity to refine skills in serving, dining room management, and other skills learned in Culinary Arts I. Students prepare for occupations such as chef/cook, baker/pastry helper, pastry decorator, hospitality worker, dietetic aide/assistant, food demonstrator, and entrepreneur. Critical thinking, practical problem solving, and entrepreneurship opportunities within the field of culinary arts are emphasized.
